I Ate This: Organic Fair soda syrups

Our taste panel sampled both root beer and cherry cola syrups, mixed into a glass of imported sparkling spring water. Organic Fair, based in Cobble Hill, B.C., does most of the work — saving you from having to source your own sarsaparilla and cherry bark — with its line of old-timey soda syrups in six flavours: ginger ale, orange, kola, root beer, cherry cola and, ew, lavender lemonbalm. So much for this being cost-effective refreshment — it’s still way pricier than the fizzy sugar water you can get at the gas station in 2 L plastic bottles for a toonie. Stir one or two tablespoons of the potion into a glass of sparkling water, and you’ve got an instant soft drink. If you need a fix of sweet soda, and you’re willing to put in the work, you can save (a little) by making your own at home.
