The food culture of Delhi also changed the Punjabi way, with traditional Punjabi cuisine gaining increasing popularity as the time progressed. Tandoori became the food of Delhi, and Mughlai, the older cuisine genre, eclipsed gradually. The emergent food platter of the city came to be dominated by Punjabi delicacies, both vegetarian and non-vegetarian. Tandoori chicken and butter chicken, popular among non-vegetarians, are perhaps two significant additions. Owned mostly by Punjabis, they served Punjabi delicacies — which very soon became popular as “Delhi food”.
