When the news came last week that renowned Toronto chef Susur Lee has been having his servers fork over their tips to pay for everyday restaurant mishaps — like spilled drinks or wrong orders — he and his restaurants were blasted for the illegal policy. According to the CBC, the money that staffers at restaurants Lee, Fring’s and the now closed Bent were forced to hand over was referred to as “IOUs” by management, with the dollar value written on tip envelopes. After staff revealed the policy on social media and news began to spread, Lee and his sons Kai and Levi shared a letter this week in their staff’s envelopes that they would be changing the policy. They wrote, “The IOU policy has been eliminated across all of our restaurants. Lee noted in his letter that he was not aware the policy had changed.
