Sake for winter sipping


Traditionally, sake is warmed in a tokkuri, which has a narrow neck to keep the heat in, and poured into ochoko. Unfortunately we can't really get the full Ryokan experience here in New Zealand, but we can bring a little bit of it into our winter nights with some sake shared among friends. A "shibu" is sake with fresh grapefruit juice – try 40ml sake and 60ml grapefruit juice mixed in a tumbler with ice. For winter though, my favourite is warmed (but not super heated) sake. Don't forget that, unless you are alone, you should really serve and be served when it comes to sake.
