By using the bones and the meat, you will make full use of the fish for this recipe. Cover with a lid and cook over low heat for 20 minutes or until the rice is cooked through. For the herb sauce, place all ingredients in a small food processor and whizz until finely chopped. Increase heat to high and add cockles, ¼ cup of the green sauce and a splash of water. Spoon over fish and rice and serve with remaining sauce and lemon wedges.
