The Parmigiano Reggiano Consortium (PRC), the industry organization overseeing its production, estimates that global sales of fake versions amount to roughly $2 billion each year. Each legitimate wheel bears marks of origin to help people ensure they’re buying the real deal, such as a “Parmigiano Reggiano” dotted inscription and a dairy identification number. “We won’t give up.”The PRC fixes a casein label to the rind during the first few hours of production, which contains edible microtransponders. “Parmigiano Reggiano is one of the world’s oldest and most famous cheeses, and it is a product that symbolizes Italian produce,” Nicola Bertinelli, president of the PRC, said in a statement. Of the G8 countries, Canada showed the biggest growth in imports with an unprecedented 36.8 per cent increase in demand.
