Our cookbook of the week is the award-winning The Currabinny Cookbook by James Kavanagh and William Murray. Bacon and cabbage – a quintessentially Irish pairing – was the starting point for James Kavanagh and William Murray’s fried cabbage and ham sandwich. “It’s very traditional ingredients – ham and cabbage – but in a lovely sandwich,” says Murray. It’s shredded finely and fried along with cooked or cured ham (like speck, prosciutto or capocollo) in a flavourful garlic, lemon and parsley butter. Step 3Spoon the ham and cabbage on to the bottom piece of baguette, put the top on and eat immediately.
