QUEBEC CITY-You feel the layers of history, elegance and chic as soon as you walk in the door of the Auberge Saint-Antoine. The hotel, part of the Relais & Châteaux association, has 95 rooms and almost as many awards and accolades. Rue Saint-Antoine, just blocks from the St. Lawrence River, has been named for a butcher from Bordeaux who settled here in the 1700s. You can brush up on all that history in three displays on the way to check in at the front desk. At my table, plaid seating melds perfectly with rough stone walls, just like the scotch, vodka and ginger syrup meld with the barbecue sauce in my Smoking Caesar.
