Zespri's chief operations officer Simon Limmer saw firsthand the impact on Italian growers as the variety they had grown since 2001 succumbed to the disease. At harvest the two key parameters are brix levels and dry matter. Brix levels tell how high sugar levels will be, while dry matter levels also determine taste - dry matter is what is left over once the water is removed from fruit. Growers are incentivised by higher payments to boost dry matter levels as high as they can.
