Bartenders want to put ice cubes in the drinks. They have tried giant balls of ice, or ice in the shape of a diamond or a 5-inch spear. Mr. Ambrose cuts two-inch-square ice cubes from a block of ice. His average price per ice cube is 70 cents, or roughly $3 less than the ice sphere. Mr. Alperin said ice cubes are their best seller, although they altered the shape into more of a rectangle to fit the glass better.
