The stir-fry is one of the best meals for the solo home cook to learn to make. Break out the teriyaki sauce, drizzle it in soy sauce, or try this two-ingredient coconut milk and curry sauce for a rich and aromatic upgrade. Be sure to use canned unsweetened coconut milk, not coconut cream (which is a substitute for whipping cream). Some supermarkets stock coconut milk in little cartons the size of juice boxes, perfect for single serving use. Of course leftover coconut milk will keep in the fridge for a few days and can be frozen for future stir-frys, soups and smoothies.
