1 Using your knife to scrape chopped-up ingredients into a pot will blunt it. 2 Tupperware that has lost its lid was the bane of my life, until now. Little pots are perfect for the mise en place (everything that has been weighed, chopped and mixed before you start cooking). Seems like lots of extra washing up, but it’s worth it (storage pots, £2.50 for five; sainsburys.co.uk). 3 Fancy knives are gorgeous, but really it’s all about the sharpness, so a good-quality steel is the best investment (£25; johnlewis.com).
