But one ambitious company believes that sushi should be customised for customers - based on their saliva and urine. Open Meals, a food concept company based in Japan, has revealed that it is opening such a restaurant in Tokyo next year, called Sushi Singularity. The restaurant will serve customised 3D-printed sushi, based on each diner’s saliva, urine and ‘intestinal tests’. When customers visit the restaurant, they can provide this ID, before customised sushi is printed for them.
