For New Yorkers of a certain age, the Danish is the quintessential morning treat, whether it’s filled with cheese, cherries or even prunes. But when Ole & Steen, a Copenhagen-based bakery chain, opens its first location in the city next week situated in the Union Square area, it will bring a different sort of Danish to town. As in the authentic, Denmark-style pastry, which often has a lighter texture than its American cousin and comes in varieties many New Yorkers will find unrecognizable.
