Mr. Stulman also likes naming his restaurants for family members, but in the Freehand New York hotel, where he is running several properties, this applies only to this flagship. There’s a handsome, wood-paneled George Washington Bar, no relation, named for the grand 90-year-old hotel’s previous life as the George Washington. Mr. Stulman is also running Studio, an all-day restaurant on the hotel’s second floor, which opened this month. In the airy white tile and copper-trimmed New York branch, the chef will be Peter Balistreri, who will deviate somewhat from other outlets with more daily specials, like pasta dishes. It will include a coffee bar and bakery from Orwashers, a Juice Press juice bar, an outlet for “plant-based” burgers from Next Level Burger, and beer and wine on tap.
