The Philippines as a majority Catholic country takes Christmas as a festive family holiday with the first signs appearing even in November before America’s Thanksgiving. Naturally the tropical Southeast Asian country has spun off its own Christmas food. If in someone’s home on Christmas Eve (Noche Buena) or one of Manila’s restaurants open Christmas Day, expect to find bibingka. Another “big favorite” for Christmas is babi putar, a whole pig skewered and roasted over a fire, the Sulawesi-based resort’s marketing executive Sarah Wormald says.
