Add the chicken and coat well in the marinade. For the dressing, combine the fish sauce, lime juice, chilli flakes, and the remaining 2 teaspoons palm sugar in a large bowl. Grill the chicken for 5 minutes on each side or until cooked. Add the chicken, toasted rice and herbs to a bowl with the vegetables and dressing, and stir to combine. Divide the lettuce leaves and larb among plates and serve with steamed rice.
