The drops are best filled with cream and jam at least 30 minutes before serving; this allows them to puff up and soften slightly. Line a baking tray with baking paper. In a mixing bowl beat egg whites with salt until stiff. Sift flour and baking powder three times then sprinkle over the surface of the egg mixture. Cool on baking tray for about 10 minutes before transferring to a rack to cool completely.
