Kashgar is the name of a Silk Road city on the northwest frontier of China famous for its huge bazaar. Here, a friend tells me, you can watch the noodle makers at work while slurping on a bowl of robustly flavoured noodles such as these. Peel and finely chop the garlic. Heat a wok over a high heat and when very hot, add the oil and swirl it around the pan. Add onions and pepper and stir for about 2 min until the onions are transparent but not softened.
