KUMARA, RED ONION AND CORIANDER FRITTERSServes 4 / Prep time: 10 mins / Cook time: 30 mins2 large kumara1 red onionsalt and pepperolive oil1 tsp cumin seeds1 Tbsp grated parmesanhandful of coriander (stalks included), finely chopped2 eggs, lightly beaten50g butter, for fryingPreheat the oven to 180°C. Transfer the kumara and onion to a mixing bowl and mash everything up a bit. The kumara and egg act well enough as a binder. Pop the cooked fritters on top of a paper towel to drain off excess oil while you do the rest.
