In the meantime, in a large pan over a moderate heat, add a wee bit of oil, followed by the garlic. Add the lardo or bacon and continue to fry gently for another 4-5 minutes, until it has rendered down well. Once the pasta is al dente, remove from the heat and drain, retaining at least a cup of the pasta water. Take the artichoke and pasta mix off the heat and gently fold in the yolk mixture. Add a few tablespoons of the pasta water to help create a lovely thick sauce, folding everything together well.
