Puffed wheat squares, a sweet piece of Alberta history

Fans of the puffed wheat square, a Canadian delicacy, have Alan J. Russell, a self-professed "maker of good candy," to thank for the sweet and sticky treat. Sandra Gibson, Russell's great granddaughter, said she is compelled to keep up her family's history and preserve Russell's candy-making skills for future generations. Barbara and Sandra Gibson's ancestor, A. J. Russell, is credited as the creator of the original puffed wheat square. According to his family the puffed wheat square eventually became much softer and gooier than Russell's original recipe, which was more of a brittle. A Red Deer family keeps traditions alive, including the original recipe for puffed wheat squares.
