New York Times food correspondent Brett Anderson noted that the craft pizza renaissance is "culinary convergence" that started with big city chefs but has since taken hold in smaller towns as well. Anderson calls the pizzerias on the list "evidence, perhaps, that the country is home to the world’s best pizza." But even more than pizza, Bianco is credited with establishing "the pizzaiolo-as-pitmaster" persona as he spins "magic from woodfire."
