HUDSON — Rail Trail Flatbread Co. is in expansion mode, both within its current premises and other locales. A new dining room has opened at the downtown Hudson restaurant, expanding service and adding seating that can accommodate larger parties. “We just thought our community has kind of evolved into something different,” said Michael Kasseris, co-owner of Rail Trail Flatbread Co. and other business ventures in Hudson and beyond. Rail Trail is also working on a location in downtown Milford. “Since we’ve opened we’ve been a busy place and we always want to try get as many people fed as possible,” he said.
