This week we are back into one of me most favourite foods:Crispy fried chicken, but this chicken is baked not fried. Combine this crispy chicken in a bao bun with some coleslaw, sriracha mayo and some fresh coriander. Bring to the boil and simmer for 5 minutes, remove and allow to cool for 5 minutes in the liquid. Remove the chicken from the cooking liquid and pass through the egg wash then the crumb mix. Bake for 35 minutes whist you make up the mayoSiracha mayo3 tbsp siracha sauce6 tbsp mayonnaiseJuice of 1 limeCombine and serve with your crispy chicken
