It was exciting to interview Lidia Bastianich on stage at the Sony Centre recently when the beloved television chef was in Toronto promoting the new season of her TLN cooking show and cookbook Mastering the Art of Italian Cuisine. On television, Lidia is like a trusted friend or relative teaching you about Italian food, but Lidia also heads a culinary empire. These recipes are adapted from Mastering the Art of Italian Cuisine. Add mushrooms and sage and cook, without stirring, until mushrooms start to brown on the bottom. Add veal, in batches if necessary, in a single layer and brown on all sides 6 to 10 minutes.
