Strawberries might be healthier than wine or chocolate but, as fresh produce, they’re also more vulnerable to food waste. “Food waste is an unaddressed problem, and a huge problem,” says Peter Mehring, Zest’s CEO, especially for fresh fruit like strawberries. According to the company, every hour spent in 85 degree weather reduces the shelf life of strawberries by one day. “Day to day,” he says, “I don’t think there’s enough focus on solving the problem. “There’s both a business and a sustainability [benefit] for companies to get on board.” Eliminating food waste benefits the entire food system.
