A traditional festival to honour Chinese deities and ancestors, it is a time for families to gather, shake off ill-fortune and make way for incoming good luck. And in honour of this auspicious occasion we spoke with the executive chef of London's leading Chinese restaurant Park Chinois, Lee Che Liang, about their own Chinese New Year celebrations. Does the menu you've created - is that a fairly traditional Chinese New Year menu or does it diverge? The Chinese New Year dinner is incredibly important in Chinese culture and within our menu we wanted to create a series of dishes that are both celebratory and hold meanings and traditional symbolism. n our Chinese New Year menu we have created a crispy chicken dish with mango and lemon that gives the blessing of good fortune and prosperity.
