Hyatt Regency Kota Kinabalu general manager, Thor Gervasi, said the hotel's monthly food waste could reach between 500kg and 600kg during peak periods. Turning it into compost was a practical solution, allowing it to be repurposed and upcycled," he said, adding that food waste volume could be reduced by up to 75 per cent within 48 hours using a composting machine.
