While the soup simmers, bring a large pot of salted water to a boil and fill a bowl with ice water. Lift out of the boiling water, plunge into the ice water to stop the cooking, and drain. Allow 8 to 9 minutes cooking time on the meat side before you flip the chicken. Lower the heat, add the soy sauce, and heat until it starts to simmer, about 3 minutes.
