Greek Christmas shortbreadMAKES 24Ingredients150g slivered almonds, roasted250g butter50g pistachios, shelled and unsalted75g icing sugar1 Tbsp rose or orange blossom water½ tsp vanilla extract1 Tbsp baking powderpinch of salt300g standard flourextra icing sugar for coatingMethodHeat the oven to 200degC. Roast the almonds on a sheet of baking paper on a baking tray for 7-8 minutes until golden brown in colour. In a food processor, add the cold butter, first measure of icing sugar and rosewater and blend until breadcrumb consistency forms (10-20 seconds). Sift heavily with icing sugar and toss gently to coat the whole biscuit.
