They don’t look at plant-based eating as a trend like the charcuterie boards and pork belly of a decade ago. Restaurateur Steven Salm, left, and Nota Bene chef David Lee are already partners in the plant-based restaurant Planta. In the spring they will open an Asian-inspired plant-based restaurant in the Nota Bene location. Hogtown Vegan opened in Kensington Market in 2011 serving jackfruit burritos and seitan cooked to simulate corned beef.
