Francesca's Baked Salmon and Lentil Ragu


Add the wine and bring to the boil over medium heat and reduce by half then add the tomatoes and stock. Add the lentils and stir. Heat some olive oil in a pan and sear the salmon fillets on each side until coloured. Top each dish of lentils with a salmon fillet and bake for around 10 minutes or until cooked, depending on the size of your fillets. Dress with gremolata (chopped parsley, garlic, lemon and EVOO) and shaved fennel.
