FRAMINGHAM – After emigrating from Mexico to California, Jose Varela said it wasn't until he moved to Massachusetts that he had trouble finding authentic Mexican restaurants. “(In California), at every corner you’d see a taqueria or a little Mexican restaurant,” said Varela, who first moved to Hopedale in 1995 before settling in Framingham 24 years ago. Earlier this month, Varela opened his own authentic Mexican restaurant in Framingham called Tacos & More, at 80 Waverly St. Next to tacos, its menu also includes burritos, fajitas, taquitos, enchiladas, specialty skillets, omelets, salads, appetizers, hamburgers, pasta, subs, desserts and shakes. Varela, 55, previously operated the El Mariachi Mexican Restaurant – also in Framingham - which closed at 358 Waverly St. in March 2020 because of the coronavirus pandemic.
