PhotoSaucisson sec, an air-cured French-style salami, is conveniently snackable. Now D’Artagnan, which has been making a meaty, garlicky and slightly chewy heritage pork version for some time, has added two more varieties. The duck is tangy, spicy and somewhat soft. The wild boar is richly earthy and my favorite of the three.
