Our cookbook of the week is Zaitoun by London, U.K.-based writer Yasmin Khan. To make them in an electric or gas oven, Khan recommends using a pizza stone, “as they get much hotter than a baking sheet. Step 2Separately, whisk together the yogurt and 3 tablespoons extra-virgin olive oil, then add to the flour, along with half the water. Step 8When you are ready to cook the mana’eesh, make the topping by mixing the za’atar and 5 tablespoons extra-virgin olive oil in a small bowl.
