Inspired by our global travels and love for coffee, this punch, which combines coffee with white chocolate, coconut milk and amaretto, is an indulgent affair created for our new restaurant in Covent Garden. Clarified coffee and amaretto milk punchServes 4For the punch60ml amaretto60ml coffee liqueur200ml brewed espresso – we use our Daily Blend60ml lemon juiceFor the milk60g white chocolate180ml coconut milk – the type you cook with, not barista-style coconut milkPut all the punch ingredients in a bowl and stir gently to combine. Pour the coconut milk into a medium saucepan on a gentle heat, then add the white chocolate and stir until melted. Slowly and gently incorporate the punch mix into the coconut milk pan, then take off the heat and leave to rest for 15 minutes. Strain the hazy punch mixture through coffee filter paper into a jug – it will slowly drip through, leaving a clear and silky-smooth cocktail.
