First off the bat is the Abalone and Salmon Yee Sang, a staple dish by now for Chinese New Year gatherings. As capons are usually not sold in supermarkets, this is a good opportunity to taste how castration improves meat quality. Claypot Fragrant Rice with Preserved Waxed Meats is a winner in Eastin Hotel’s Chinese New Year menu. I was not expecting overwhelming response to this, as this rice dish is the last item before dessert (when diners are already full, or nearly there). And many others on my table agreed, and I actually saw the rice dish being finished in a nine-course Chinese dinner, which is a rarity.
