Sustainable Restaurant Holdings Inc., the Bain Capital-backed operator of Bamboo Sushi and QuickFish, has filed for bankruptcy with hopes of finding a buyer for what it says are environmentally conscious restaurant chains. Sustainable, founded in 2008 with the stated goals of being transparent about food sourcing and mindful about its carbon footprint, filed Tuesday for chapter 11, saying it had already been struggling but that Covid-19 business-closure requirements caused all of its restaurants to cease normal operations.
