Macy’s, home of one of America’s original great Food Halls, called theirs The Cellar. This makes them well acquainted with the organizational and financial side of the Food Hall model. The New York Times just did a piece on how shopping mall – home of many a Macy’s -owners are looking to food halls of all sorts to bolster traffic. New York’s beloved Grand Central Terminal led the way with market halls and food halls and continues to innovate and evolve. Folks in the Specialty Foods industry will suggest that much inspiration for this boom can be traced to the great Food Halls of Harrods’s in London.
