Spread 1 side of each piece of bread evenly with butter. On the other side of 1 slice, spread mustard, then top with 1 slice of cheese, apples, then another 2 slices of cheese. Fry on both sides until the cheese is melted and the bread is toasted and golden, about 4 minutes per side.
